Best local casinos and why
What are the locals favorite casinos, and which casinos cater best to the locals? I'll tell you one thing -- when I move there -- I will definitely stay away from the overpriced Strip hotels.I did a short-term contract in Vegas back in 2005, and I hated driving anywhere near the Strip.
Let's hear it from the locals!

southpoint, silverton, jerrys nugget, in that order
southpoint has movies and bowling and good restaurants, silverton has good restaurants, aquarium, and bass pro shops, and jerry's nugget has cheap food...the orleans, gold coast, sam's town, and boulder station are all nice too with similar amenities at southpoint...

I'd think it depends on your age and vibe you're looking for. If you're 25 and no kids, The Palms. Just watch the silicon feast pass you by. Looking to ditch the kids? Most Stations and Boyd properties have kids baby sitting. Personally for me in my 40's and no kids I like The Palms, Red Rock and GVR. Red Rock is a beautiful place and has good gaming. Almost "Strip Worthy". I think the old Coast places have gone downhill since Boyd has taken over. Southpoint is good too, Micheal Gaughan knows how to run a casino. A lot depends on what area you are going to live in too.

I personally avoid the Station Casinos totally since they decided to outsource their reservations department to India.

I haven't noticed much of a difference since the changeover at the Orleans, a place I really enjoy. They have plenty to do and the some of the best off strip cocktail waitress uniforms. Plus, if you like minor league hockey it's the only game in town. Big fan of Red Rock and GVR, too.
I got yelled at at the Silverton while playing craps for doing something I do at every other table so I never go there anymore.

I like the Santa Fe but mainly because it's close, has bowling and a movie theater for the wife and boy, and the poker room is not filled with drunk tourists (how is it that they always suck out?!). If the Red Rock was closer I would much prefer to go there. It's much nicer. The Fiesta Rancho has an ice rink, which is really the only reason to go there at all. I will have to check out Aliante Station soon as I hear that their poker room is nice as well as the rest of the casino.

We like going downtown to Fremont Street. The people (read: tourist) watching opportunities are almost as good as on the strip without the hustle and bustle. Binion's poker comps are great ($2/hr), so I play there fairly regularly.
We like the Mongolian grill at the buffet in Fiesta Rancho, and sometimes play the tables there. We also visit other Station properties sometimes, as well as Arizona Charlies on Decatur.

Two of my favorite casino's are Aliante station and Santa Fe. I win at both regularly. Aliante has some nice restaurants. And the casino is similar to Red Rock.
Santa Fe I got so sick when I ate there twice on two separate occasion's, so never will do that again ever. But the machines are pretty good. 
Sunset station is also a good place. For the rare times I get over that way, I always win something before I leave. And the italian restaurant in Sunset Station is very nice as well. Good food, courteous employee's.

We go to different properties for a variety of reasons. Texas, Palace and Red Rock for Bingo are good. South Pointe is good for general gambling, reasonable food, reasonable old timer shows and a horse areana with a bar. Palace has good karaoke and they say Ellis Island does as well. Aliante and Orleans for poker rooms. And finally, by far the BEST BREAKFAST in Las Vegas is still Binions.
