Social House in Treasure Island.
Amazing food (but expensive). Good looking crowd as well.
They have an outdoor patio, which offers a view of LV Blvd and, at certain hours (7pm, 8:30pm, ...), a pirate show by Treasure Island. You will have a great view of both the Strip and the show while you eat.
SushiSamba (in the Palazzo) is also a very fun place- Brazilian and Japanese fusion. Great food and also good looking crowd.

Back when I lived in California, I remembered seeing a sushi shop next door to a bait & tackle shop once near Berkeley.

That is why all long range sailboats have a trolling line and wasabi.
Nobu at the Hard Rock for fusion sushi.
Okada at Wynn for the conventional.

Some good friends of ours just had dinner at Yellowtail at the Bellagio and absolutely raved about it. They said you can sit outside on the patio with a view of the fountains.
