Festivals / Carnivals.... such a thing in Vegas?
In Ohio, we have tons of festivals (church, etc) and carnivals with rides, decent food like fried dough, etc.. Is this something that happens in Vegas also?

I know there is a Greek Festival and a Hawaiian festival once a year just not sure when or where.

We don't have all the festivals you have back east, but if you think about it, aren't those mostly festivals that different communities put on throughout relatively small (compared to Nevada) states? We don't have all those little communities to put festivals on, but we do have plenty. It's just that our state is so spread out that they are a long ways away sometimes, like the Basque Festival in Elko, or the Cowboy Poetry Gathering, also in Elko. I believe Ely has at least one big gathering, and Tonopah has Jim Butler Days. Beatty used to have the Wild Burro Races. I don't know what happened to that. Reno has some events like Hot August Nights, among others. Mesquite and Laughlin do different things.
In Las Vegas, we have two, week long, San Gennaro Feasts per year, as if one wasn't enough. We have the Greek Food festival that lasts several days at the Greek Church. Henderson and Boulder City each has a couple of festivals, each of which is one major and one minor art festival. Boulder City's Art in the Park is pretty famous. We just had Helldorado. In Overton they have the County Fair and Rodeo, and they have a Bluegrass Festival. We just went to a free concert at a park in Summerlin Friday night. Summerlin has lots of activities, like the 4th of July celebration including an old fashioned parade. We have a Martin Luther King event I believe and Black History celebrations. Downtown Fremont Street is always putting something on. Las Vegas pretty much has a festival of some kind every day. I'd say the National Finals Rodeo is a world renowned festival.
Some of these things have a different flavor to them than the old fashioned, small town, festivals you find elsewhere, but they're still fun. You just have to watch the papers, and be prepared to do some long driving trips. One thing I've always complained about is that they don't usually publicise these things well enough in advance so you can plan.

Hearing about all these festivals makes me miss my old RJ subscription. I know it's online too, but it's just not the same as a paper I can hold in my hand.

Many years ago the Las Vegas Chamber of Commerce used to hold a 5 day fair and carnival at the convention center across from the Hilton. It was really fun. I went there a couple of years as a vendor and had a great time (also made lots of money!) The one problem with it was that it was held in mid August and the carnival was a complete bust because it was too hot to be outside. I am looking for property in Las Vegas for retirement and have a childrens craft business and hope there will be opportunities such as these to attend.
