January is pretty cold whatever you do so dress warm. If you're looking for something romantic, rent a cabin at the Grand Canyon if you have some time, and want to wake up with your sweetie in of the most beautiful places in the world. Waking up to that scenery and fresh air on a honeymoon is a really sensual experience. Just rent a car and drive over. I'll never forget the amazement and happiness in my wife's voice when she called me to see the deer just outside our window.
Or, if you don't have a lot of time, rent a cabin at Mount Charleston Lodge. You'll still be in snow and a beautiful location, although nothing is as spectacular as the Grand Canyon. I'm not sure, but they may even have fireplaces to snuggle up with a couple of Mt. Charleston Coffees (which is more about the booze than the coffee). Take an inner tube and do some tubing, or if you ski, drive around the hill to Lee Canyon and go skiing. They'll rent you the skis, boots, and poles.
Into skiing in a big way? Mt. Charleston is OK for day skiing out of Las Vegas, but for serious skiing, drive up to Brian Head, Utah. It's about 3 to 3½ hours of beautiful scenery from here. You can rent a ski in/ski out condo or just a room. We have a friend who had a condo, so we've done that, but also stayed at the Brian Head Hotel a few times. Georg's Ski Shop rents rooms above the shop too, and that's our favorite place to stay. It would the cheapest place to stay except the store has so much nice stuff we end up spending an arm and a leg for ski outfits, coats, boots, etc. Don't ski? Go anyway and take a lesson. They have one of the best ski schools and can have you skiing in one day.

Soundman, you can't make that blanket generalization...My wife and I got married in The Rio chapel on 12/31/2001...and have never regretted it. For some, like us, with slightly non-traditional thinking this was something we wanted to do, are proud to say we've done it, and got to cross off one more thing on our list of "50 things to do before we die."

My second wedding was in the Marryin' Sam (marriage clerk) office downtown at the courthouse. I will forever regret the marriage, but not the ceremony. It drives me crazy to see people spend a fortune on a wedding that could be saved or used for something worthwhile (like a new Jeep  ). Who the he** cares but them and the wife's mother? Better to spend it on a great honeymoon and save the rest of us the trouble of buying you crap you'll just re-gift anyway, and sitting through a boring ceremony that means nothing to the rest of us.

I like the Little White Chapel, they have a service that includes the limo, a drive though wedding would be pretty fun.
I live in AZ so I am not really into the Grand Canyon right now, and we both hate snow.

You understand that traditionally the bride’s parents pay for the wedding, so it shouldn’t cost you anything. I’ve always been a fan of the more traditional wedding, because it doubles as a great big family reunion. That is what is missing with the Vegas wedding.
If that is what you want to do, at least do it in a nice hotel like the Bellagio or Wynn. Don’t go to one of those gross chapels north of the Stratosphere. Yuck!

The other half went to the little chapel that used to be on the Frontier Grounds

Not really in our situation, the parents are just as broke as we are. They are helping out with the reception costs though, that is when all the family is flying out.
