JG Gourmet food server II is food runner. The department manager told me back in my interview that JG consists of teams which are: gourmet server I which is the main server, Gourmet Server II which is the runner, and then the busser.

So, food server I does table service? Food server II runs dishes from the kitchen to food server I ? Does food server I do tableside flambes, etc, or need any culinary skills food server II doesn't. While, ignorant in this area, I can only assume server I must have some skills server II doesn't have. Or, would food server II be likely to work in catering services, etc ?

From my understanding of what I was told about a few weeks ago, is that if the position you applied for is no longer posted means that the department managers took it off because their done taking apps for that position. If yours still say active thats a good thing, hopefully you'll be getting a call soon....Good Luck

Hi Butterfly69,
Yeah the position is off of their website. I could imagine there are tons of people being scheduled for drug test and they could be doing it in batches. When I followed up at city center, I was told that they could only have a certain number of scheduled drug testing per week. She also said that she wouldn't recommend dropping my app just to apply for the same category (gourmet server to gourmet server but to a different restaurant)because it's the same people who will be interviewing me again. It will only repeat the cycle. That's when she added that if they really like to hire you as a gourmet server, you could get offered for another position at their other restaurants should the restaurant applied for gets filled. That personally doesn't make sense cuz that cuts the purpose of them only wanting you to apply for one position at a time. Anyway, goodluck to you too!

The food server i is the front line in table service, the one that starts and finishes the service. They have more training as far as wine/alcoholic beverage service, upselling menu items, and providing direct one on one service with the guests. Food runners are mainly the one who run food from the kitchen to the table but the server is still the one that describes and sets the food down to the guests. There is less requirements for a food runner because the dining experience mainly falls on the main server. The main server controls it's crew on when and how they want it done.Every server has a different way of providing service and are not restricted to just one system. As long as they abide and follow the basic steps of service, they can tweak their pace the way they feel comfortable.

Thanks--I think I understand. What is the difference in tip earning between I & II ? Is there an industry-accepted percentage I will tip II, and bussers, or do they rely on the conscience of I to do the right thing. I have heard that the convention, catered servers used to do quite well, as something like a 23% gratuity was charged on the total cost--not glamorous, but lucrative.

I applied for cocktails and went today to take my drug test 6/29/2009. I am curious when the backround check starts...Is it after the drug test comes back negative? Or do they do it before the hair test?
