Babylon Village, Bay Shore Village, Islip Village, Sayville, and Patchogue (if we are only focusing on going SOUTH of Huntington Village, rather than including EAST and/or WEST as well).

Try Babylon or Bay Shore. Both have nice downtown sections with bars, restaurants, stores, etc.
