What are some other options and good ideas for space use? The bathroom and living areas can always be put to use, but what do you do with a second kitchen?

You can't rent out a mother/daughter, the permit is specifically for family members only. It's not the same as a true tenant which is a different permit.

Now if you're talking about living there just as one family, I'd probably use the second kitchen for cooking and storing stuff and the main kitchen would be where I'd have family gatherings. Or, just rip out the second kitchen.

This.

Or keep parts of the second kitchen intact. A second fridge and a small counter are handy if you entertain a lot.
