What exactly do you mean by evangelical bible believing type of church?? If its along the lines of the types of churches that stereotypically you would associate with the south I doubt your going to find much of that here on LI or really anywhere else in the region.
As far as commuting to Columbia, while it would be easier from parts of Jersey and Westchester it shouldn't be that bad from Nassau. I work in downtown Manhattan and commute every day from Massapequa (which is in SE Nassau)
Going to Penn station the commute could take anywhere from 30 minutes to an hour (depending on where exactly in Nassau you are and if your on an express or local train) though portions of the Oyster Bay Branch can be a bit longer (as its a bit further out of the way and you generally have to transfer at Jamaica). From Massapequa it generally takes me 50-55 minutes to get to Penn slightly less coming home if I catch the express. Obviously the further west you go into Nassau the shorter the commute, with northwest Nassau along the Port Washington branch being the best (closest and doesn't have to go through Jamaica), but it will be hard to find something in your price range in that area.
Once you get to Penn you would take the 2 or 3 train (expresss) for 3 stops to 96th street and transfer to the 1 train for 3 more stops to 116th street. I haven't done that route myself for sure to know how long it would take, but I would assume 20-25 minutes or so. Going there at odd times would be a bit longer, but the times she would likely be doing the traveling the trains run pretty often.
So depending on where exactly in Nassau you live and if your on the express or local the commute could range from a little under an hour to an hour and a half, from the time you get on the train to you get to Columbia. It usually takes me about 1:10, 1:15 to get to my office from the time I get on the train which would be about 10 minutes less than it would to get to Columbia. You obviously have to give yourself some time to get to the train station, but most places in Nassau generally have a train station within a 10 minute or so drive, though depending on the time and station you might want to give a few extra minutes to find parling.
