How would it work if my grandma and grandpa are both retired looking for an apartment, my grandpa has excellent credit but my grandma may have an eviction on her credit, would you still rent to them or not?

Yes I would. Your grandma has been on this earth for how long now? and she's only had 1 eviction throughout all those years? I'd say that's pretty normal. Stuff happens.

How long ago was the eviction? The best thing to do is pull the credit reports and scores for both. It's a good idea regardless of eviction or not.
