Agree with the denser chicken piece comment but I find it has its own taste superior to chicken.

BTW you have to watch who cooks it because if you don't cook it right it is very greasy and doesn't taste good

Chicken taste, steak texture. It really is delicious when done right. I was once given a 3 pound package from a gator farm..I was so excited, I marinated it in fajita seasoning and put it in the oven, well the whole house stunk horribly and I didn't know why. When I tasted it, the texture was what I expected but there was this weird metal aftertaste. Evidently when people are cleaning the gator and the knife hits a musk gland, that's it for your meat, it's ruined. Anyone else had some funky gator before? Boy those fajitas were nasty!

I agree with everyone, chicken like, but not chicken. Dense texture a little tougher then a decent steak. Not fishy.
I couldnt believe I actually tried it and loved it.

Best gator I had was steaks made from the tail. They were sitting in a marinate for a day or two to help tenderize the meat befor being put on the bar-b-que pit grill. The parts too small for steak was ground up and either used as a burger or browned in a skillet to cook with rice.

Taste nothing like chicken. It's a mild meat flavor that taste like, well like gator. It has to be cooked right are it will be tough. I have 4lbs of alligator sausage in the freezer. I use it when making etouffee, gumbo, jambalaya, etc.

Agree with the taste of chicken. Be careful eating frozen gator that is commercialized, as it is rather flavorless and dry and does not do the real taste of gator any favors.

I usually buy it from Thibodeaux's in Duson.
Its a tiny little hole in the wall restaurant that serves really great plate lunches.
