Cajuns are pretty down to earth, hard working, folksy people. They love to have fun and enjoy life. they LOVE music. They love dancing. These are not touristy showcases, this really is how Cajuns live. they are on this Earth to have a good time and you damned well better join in the fun.

I'm hopeful that it will be a good time! What about crime rates? See, in the major cities within the USA, there is the whole gangster ghetto criminal mentality and I wish to avoid that culture, entirely. Do they have similar issues in Breaux Bridge? Also, I have been trying to locate apartments for rent and Craigslist doesn't have too many listings in Breaux Bridge in the Lafayette section. How would you suggest I begin locating housing?

The acadiana area does a lot to keep gang activity to an absolute minimum. Don't worry about gangs here, especially in Lafayette, although there will be the occasional shootings and domestic cases. But unless you are somehow involved in drugs or crime, its doubtful you will comes across these things.
As for finding housing, I'm not too educated on that particular subject. I lucked into finding decent apartments and I now room with several friends in a small house on the southside of Lafayette.

Perhaps others can chime in here?

Cajuns are very lively people to say the least, they know how to have fun! Crayfish (crawfish) are a favorite down here, but we will eat just about any seafood (shrimp, fish, crab, oysters) on the market. (Just a side note: crawfish are actually quite good friend, not sure if you've had them). As far as religion goes, The southern part of Louisiana is heavily catholic w/ a sizable population of protestants. I think Breaux Bridge would be a nice spot for you, and if you happen to hook up w/ others who like to fish, maybe you can catch a ride down here to Lake Charles (b/c the fishing opportunities are infinite).
