gaflsc, type in the following in yahoo for sources- Chef John Folse, Chef Paul Prudhomme, Louisiana Food Sources. This should get you started. I don't go to websites to order as we can get stuff in our local markets so I cannot recommend any but watching these guys cook you get awfully hungry. Cooking and food preparation in Louisiana is exciting- in the stores there are lots and lots of folks who put together their own mixes, spices, rubs, injectors, etc. I would hope someone from southwest La. would add folks from that area cause those folks are excellent cooks too. OOPs I just thought of someone else- type in -Richard's sausage- good luck and good eating!!

In south La. we are blessed with food stores that carry "cajun foods, spices, etc." I really don't want to plug a food store chain. I was hoping someone would chime in with the smaller meat markets and such that do specialty food items. I know there must be someone out there in Breaux Bridge or St. Martinville, or Broussard that is putting something on the web. Anybody in that area know some good cajun food people?

Here are a few local site that sell Cajun Seasoned Specialty meats

I've purchased from them before its a bit pricey mostly because of shipping. Its shipped in a styrofoam ice chest with dry ice usually you'll get it in 2 days depending on location.

You can also try Poche's in Breaux Bridge:
Poche's Market and Restaurant Order Online Page
I moved from south Louisiana to north Louisiana. I usually stop there on Sunday mornings when I'm coming back from visiting my mom and dad "'n alla dem". I usually get a dinner and some fresh and frozen boudin, frozen chicken sausage gumbo, or rice dressing mix.
Also try Borque's Supermarket in Port Barre:
Page Title
I heard that the jalapeno cheese bread and boudin are awesome.

We drive out (from Florida) to the Lafayette/Breaux Bridge area twice a year for the cajun experience. We have been to many of the meat markets listed above. At Pouche's we like their tasso, at One Stop we get their cajun sausage and smoked boudin. At Don's we get their whole boneless stuffed chickens. They are stuffed with rice or cornbread mixtures with shrimp or crawfish. SOOOOO yummy. At Borque's, we have gotten their jalepeno bread...and they also sell shelled crawfish tails reasonably. I'm in Maine right now on a nursing assignment that won't end until April...I think we'll need to plan a trip back there soon!
