gabball mom, Thibodaux is a nice, fairly quiet place, commercial growth has been controlled for the most part, but it is expanding on the north side of town. If you can't find what you want here, Houma is just a short drive away and is growing by leaps and bounds. I attended Nicholls many years ago and enjoyed the school but it has changed a good deal in programs offered since I was there. They are proud of their Culinary School, I have attended a couple of their functions where the students have prepared the dishes and some of the big name restaurant people have attended. It is an enjoyable affair and the food was excellent. I would suggest a trip to see for yourself what the place has to offer.

i moved to atlanta 4 years ago, but had been living in Thibodaux since I was 6 yrs old....i am 32 now. My father was a professor at nicholls state as well as a department head, and i know at least 3 people who attended Culinary School during the day, and worked in the kitchen in the evenings. the Culinary program , from what i have been told by graduates of the program, is top notch.....and i think the local also helps the students....considering how much of an important part of the cajun culture food has become. The campus is the perfect size, so you never really have to walk too far between classes.
the one thing i can say about southern louisiana that i didn't realize untill i moved away, is that most of the people from that region don't move away. it makes you feel more comfortable choosing a doctor, when your mother went to your doctor's father when they were younger.....or someone you know will always knows somebody related to your new doctor, or preschool teacher...so you have a greater chance of finding out if they are not trustworthy, etc. since i've been here in atlanta, the "melting pot" of the US......i still go back to thibodaux to see my obgyn every year rather than going to someone here. please message me if you want to know anything else.......also, since katrina, it's been hard to find an apartment/condo to rent, so i would suggest looking for a place to live as soon as you make a decision....if you decide to move here, i may know someone with house for rent, just let me know ( sane price as as apartment) good luck!
