Does anyone know of a stone mason chimney repair person east of Machias, for example? It is probably too late to install a cap (I am told cement is needed, and it is too cold to ensure success already), but I would like some contacts please. Thanks.

There are probably quite a few masons around who can do the job. Try King Masonry in Ellsworth, if no one else is available. They've been around a long time.

It isn't too late to install a cap depending on the cap and the condition of the existing chimney. If you did nothing but support the four corners and dry laid a rectangular piece of granite cut to size, it would last until a the stone could be cemented in place in the warmer months.

The chimney could be "tented" using 6 mil poly to keep the cement warm while setting although it might be quite expensive if it needed to be heated for any length of time. Some years ago I sold the stone for a granite wall at the entrance to a residential development. The wall was around 50' in length and built in January. The entire area was tented and kept from freezing by kerosene fired salamander for the two weeks needed for construction.
