And I'm not sure what to do besides the obvious Trading Post tourist stop We're meeting during the weekend so not many galleries/museums would be open. Are there any nice parks/lakes, etc. worth checking out?

For dinner you might like "Robert's" right on Rt 1 in Kittery. We ate there last winter and it was great. There is also Kittery Point which I have heard is pretty. If you are into shopping there are lots of outlet stores. Just across the river in Portsmouth you could check out the historic "Strawberry Bank". We found that well worth a visit.

I wish I had seen this earlier! I have family that lives in Kittery and neighboring areas. If you visit your mom again soon, stop at Ruby's in York for lunch or dinner. Their pizzas are really tasty. As for sightseeing, you can't miss out on visiting Nubble Light. Ogunquit is also a pretty place to visit even if most of the shops are closed in the cold months, and Christmas by the Sea will be happening there soon. If you drive to Kennebunkport, they will also be having a celebration called Christmas Prelude during the first through second weeks of December.
