Here's one for you. As far as I know it has no official name. We just call it fish dish.
The first time my DW made this I told her I wasn't going to ever buy haddock for her to ruin again! Was I ever wrong! I love this recipe and we've eaten it a dozen times or more a year for the last 25 years.

1 1/2 lbs of fresh haddock filets
1 bag frozen broccoli florets(tops no stems) If using fresh broccoli, blanch and cool first.
1/2 a small onion
1 can Campbell's Cheddar Cheese Soup
Lemon juice
salt and pepper

In a 12" x 8"x 2" deep pan place the broccoli florets in two staggered rows with some heads in and some out to make a more or less even arrangement.
Place the fish filets on top of the broccoil as evenly as possible.
Sprinkle with salt, pepper and lemon juice.
Make 1/16" to 1/8" thick onion rings and place them evenly on top.
Spread the cheddar cheese soup on top covering the fish and onions as evenly as possible.
Bake at 350 degrees for 40 minutes uncovered (45 minutes if the filets are thick)
Cut into servings with a sharp edged spatula and serve.
Serves 6 (or three with seconds!)

This is really good!

It sounds scrumptious, Maineah! I'll have to get the DW to give it a try! We both like recipes where you can dump a can of soup over something - free herbs and seasonings without the work!

And yes - seconds are very important!

Just got done with the "fish dish" dinner. Yummy . It really is a good way to cook haddock. It is so easy my son can even do it! My daughter called me last week to get the recipe so now it's a family tradition I guess??!! I hope you like it!

Last night for supper we had beet greens (oh-my-Lord were they good), country fried chicken, and buttered noodles.

Dessert was crustless rhubarb/strawberry cheesecake - you spread the mixture on graham crackers, making the crust on an as-needed basis

I grew up with 4 sisters and 3 brothers, so you KNOW my mom had to s t r e t c h every penny! This was a crowd pleaser;

1 box cooked pasta (what ever is your favorite)
1 can cheddah cheese soup
1 can of milk (use can from soup)
1 can stewed tomatoes
Dash of salt
Smidge of pepper (black or cayenne- dealers choice)
1/2 can tomato paste
shredded cheese
bread crumbs

Mix pasta, cheese soup,milk, stewed tomatoes, tomato paste, salt and pepper together. Pour into baking dish. Top with shredded cheese and bread crumbs. Bake at 400 for 15 minutes or until top is brown and crispy.

Enjoy. This is comfort food, NOT diet food.

Moughie, I cheated. The cheese/rhubarb/strawberry mixture was made by the lovely people from Olde Oak Farms. DH and I went to the farmer's market in Orono on Tuesday, and they had samples spread on graham crackers - it was absolutely delicious.

They also had the same type of cheese mixed with horseradish and dill, spread on wheat crackers. I had to buy some of that as well I am so glad that I'm not lactose intolerant.

Siobjuan, this is going on my "must make" list as well. I love canned soup recipes!
