Placing clams in salt water with corn meal for a few hours cleans them out....they siphon in the cornmeal and siphon out the grit and muddiness. Works very well.

This trick works excellent! I've learned it from my husband who grew up in Washington county. And the best clams I ever ate were from Cutler. Yum.

He means muddy...... It's Boonskyler's first encounter with a real Maine softshell clam, belly and all!
You're used to clam strips wity no belly. Real clams have the belly ,neck and the whole nine yards.

They do have that muddy taste Boonskyler though if they're fresh the "muddy" flavor is less prominent. I'd love to make you some fried clams MY way sometime. Bellies and all you would love them! You need to try them from a real sea food place sometime like Ken's Fried Clams at Pine Point in Scarborough. World of difference!

Oh heck Boon, we'll all be at that opening!!! Now I understand the problem. Glad it wasn't bad clams. It's just a new experience for you. I don't care for the bellies when they're steamed or fried, but I loves me the li'l baby ones raw with the spicy cocktail sauce. Not muddy at all then... sweet and delicious! And they go down real good with a beer or wine!

Any place it's muddy at low tide you'll find clams. Check with the town you're in. Some flats are open to the public, though the town usually requires you to get a peck license.
