John's been looking forward to a pot of deer meat chili too. I'll stick to Hormel. I'm just a big sissie when it come to food I'm not used to. I'll have him give the buttermilk a try. If he says it kills that taste I'll try it, but I won't make any promises to like it!!

Personally, I think venison makes the BEST chili. I know chili well because my parents are originally from TX and beef chili was a staple at our house. I always figured the original Native Americans didn't have beef critters so deer meat makes perfect sense...not too fat and delightfully flavorful.

I made chili with deer meat once, and it tasted like dirt. Really, if you put a handful of dirt in your mouth, that's what it tasted like. Someone gave me the meat. When I was cutting it up I cut out a few bits of lead so I figure that might have had something to do with the poor taste.

I've been eating Red Deer lately. It tastes a *little* different from beef but not much, and it's not bad. I wouldn't mind making some chili out of it.

My stepdad told me the other night that we should be prepared for deer and moose meat to give us an upset stomach when we first eat it after not eating it routinely. Is that true?

Not that I found. First Moose steak I tied into was a hook for me. No upset stomach at all. Just wanted some more. Venison I don't like usually, go figure. Friend of mine in the Fort Fairfield area makes the BEST BBQ Moose meatballs! I could eat those until I was too fat to get my arms to my mouth anymore. Only upset stomach I found from those was from overeating, not the meat they were made with. I have not found a wild game animal that did that. Closest would be bear, but that you can tell because it is a bit strong, and a mite greasy.

I've never heard that, and it didn't bother me. Sounds like one of "rumors" that get spread around. Somebody hears something and repeats it without knowing whether there's any truth to it.

Maybe someone, somewhere, once got an upset stomach after eating it, but it could even have been psychological rather than physiological.

Thanks folks for all the mouth watering ideas for the deer roast. I've got it out tonight to thaw and will start cooking Sunday. My family has started to turn the corner on venison and if I didn't tell them the main ingredients, they wouldn't know it was deer.

From the looks of some of the screen names, are you folks surfing the Maine pages from outside the state or were those birthplaces you posted???

Oh well, thanks again and keep the good recipes coming.
