I notice a Lewiston butcher (Mailhot) makes the meat pies and the creton (pork spread) and the salmon pie also.....plus boudin (blood sausage) and wonderful breakfast sausage. They also put up salted herbs (herb salee) which I have started using in stews, my turkey dressing and soups.

Steamed brown bread, made with corn meal whole wheat flour and rye flour, sometimes I add raisins sometimes not. put the dough in a coffee can and steam it for 1 to 2 hours

Yes, it is a pate...I'll get her recipe for you! Elston is right, it is called "cretons" (but I think some people call it "corton")

Hmmm. I see it's fat free. That's good. So you take it out of one can and put it into another to "cook"? I'll have to check that out. Very interesting!

Ingredients
1 1/4 pounds ground pork
3/4 cup finely chopped yellow onion
1 teaspoon minced garlic
1 teaspoon salt
3/4 teaspoon ground black pepper
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
3/4 cup whole milk
1/4 cup fine bread crumbs

No El, you put the can in a pan with hot water and let it steam inside the can. Then you open the can and eat the warm brown bread with your baked beans and hot dogs. It was a New England tradition to eat beans and franks on Saturdays.
