Agreed! After living in Texas for a couple of years, I don't care if I ever see another pile of quivering grits on my plate. And they can keep the Hominy and Okra as well.

Give me the Shepards Pie, Swedish Meatballs, Boiled dinners, and a thick hearty bowl of corn chowder for comfort foods. Scalloped potatoes and ham, stuffed potatoes, pots of stews (Chicken, or beef) that have the thick rich, almost gravy like broth and some warm rolls or cornbread on the side slathered with butter. A nice think beef roast that has been in a crock pot all day simmering with sliced onions on top, then adding red potatoes and carrots to the crock to finish up for suppertime. You know the type, you can smell it as soon as you get out of the car in the yard and know it is going to be SOOOOO tender and moist and just as warm in your insides as the fireplace or woodstove is on your outside. These are comfort foods to me.

Old fashion comfort foods in my childhood home included scalloped potatoes (with or without cheese); scalloped tomatoes and corn scallop and tuna noodle casserole.

We had home baked beans every Friday night for supper and perhaps hot dogs.
Baking Powder biscuits with tuna wiggle or salmon wiggle were another comfort food that we had.

Desserts were apt to be bread pudding and rice pudding and ginger bread with lemon sauce.

We had gingerbread with canned peaches and "dream whip". We called it Ginger peachy.

You know, back in the dark ages, lol, when my mom would boil potatoes to go with whatever meat we were having that night, I always thought it was a terrific treat if she heated up a can of stewed tomatoes! lol What a funny memory! Thanks Garlic Guy. I hadn't thought of that in a bazillion years. I'd put the sauce on my fork mashed taters instead of butter. I wonder if I'd still like them that way. Hmmmm...

My Grandmother made me a special lemon cake with lemon sauce once a month. I loved it. She would always call me to drop by on a Sunday afternoon for lemon cake with lemon sauce. She and I were the only ones in the family that would eat it!

When we were kids we had a fish man who came to the house twice each week. My mom would often buy haddock and put it in a casserole dish and cover it in cream of mushroom soup (now you know how old I am ) and grated sharp cheese and bake it in the oven. She served it with mashed potatoes and some wretched canned vegetable.

It now seems odd and wasteful to slather cream of mushroom soup on fresh haddock but once every year or so I just have to make it. I "tart" it up by adding some fresh mushrooms to the soup and pretend I've turned it into some gourmet dish.

When talk to turns to comfort food my thoughts go to Mom's Cheese Fish Bake.

Oh my, while searching for my Mocha Pudding Cake recipe for tomorrow nights visit with friends, I came across this recipe and now I can't wait to try it... thought some of you might like it as well...

Layered Sweet Potato And Cranberry Casserole

 
4 large sweet potatoes (about 3.5 pounds)
1/2 cup firmly packed brown sugar
1 Tblsp. butter
1 cup fresh cranberries
1/2 cup orange juice
1/2 cup chopped walnuts
2 Tblsp. butter melted
1 Tblsp. brown sugar
1/2 tsp. ground cinnamon

 
Cook potatoes in boiling water to cover 40-45 minutes or until tender. Drain and let cool slightly.

Peel and cut into 1/4" slices. Preheat oven to 350 degrees. Arrange half of sweet potato slices in a greased 9 x 13-inch baking dish. Sprinkle with 1/4 cup brown sugar; dot with 1 1/2 tsp. butter. Top with 1/2 cup cranberries. Repeat layers. Pour orange juice over top. Cover and bake 45 minutes.


Combine walnuts, 2 Tblsp. brown sugar and cinnamon; stir well. Sprinkle walnut mixture over potato mixture. Bake, uncovered, an additional 10 minutes.


Yield: About 8 to 10 servings
