    I shred the cabbage per hand on a noodle wooden board (you can use shredder if you make a big batch). Spread, add some shredded carrots (no need, but looks good), add some cumin seeds, add sea salt to taste. Mix with your hands for even distribution and pack into twist-off jars. Push with your thumbs down till you see the juice on the top of the jar. Keep pushing till the top layer is completely immersed in juice. Twist-off and store in pantry. After about 10 days it's nice and crispy, and ready to eat. I like it as a salad - will add chopped onions and chopped sour apple like Granny Smith.
    If you want to slow fermentation put your jars in the fridge.

    Dirt Grinder, in regards to where 'am I getting all that wonderful rhubarb? From one of my daughters. For 2 weeks now, I have been preparing a lot of iced tea and desserts with rhubarb.

    Thanks for the rep! Yes, Spaghetti Factory seems like it started quite a trend. Funny since it never seemed to me like an especially successful chain. But they're still around, just not in the southeast US.

    If you're that close to that new place, and since you (obviously) enjoy BBQ... I'm guessing you've done the Chuckwagon gig? I'm headed there (as I always do on Thursdays) tonight.... ask for the Tom plate next time you go if Steveo is working....
