    Hi Praline! Thanks for the rep!! Yeah, bison actually is pretty tender-at least in ground form. It is just like ground beef but with a better flavor.

    Here is my recipe: all are approximatations, make it yours by customizing to your family preferences
    Topping: 1/3cup panko, 1/3 cup Parmesan, about one tbs. EVOO
    Topping 2: mozzarella
    Meat: 1 egg beaten, 1 to 1/2 lbs ground dark meat chicken, 1/2 minced onion, 1/4 c basil leaves crumbled, salt, pepper, garlic, fresh crushed basil; Italian bread crumbs, Parmesan cheese
    Sauce: cook down fresh or canned tomatoes with seasoning, a spoon of white sugar, basil garlic and onion, salt and pepper, let simmer
    Mix ground chicken mixture, place 1/2 in loaf pan, top with mozzarella cheese; top with remainder of chicken mixture and pat on panko topping. Bake for 25 minutes at 400. Then broil for 5 minutes.
    Top with more mozzarella and tomato sauce. Serve with pasta.
