I hope some other people help out with your questions!
The new(ish) Avenue at Carriage Crossing in Collierville is a very nice outdoor mall, with lots of shops and restaurants. Like nothing else in Memphis, very well kept and upscale.
There are many upscale stores scattered throughout east Memphis and Germantown as well. Along Poplar Ave in Memphis are some expensive boutique stores. Saddle Creek in Germantown is a smaller outdoor shopping area, spread out among 4 sides of an intersection. It has some good stores, but is not a "mall" like Avenue.
I would steer clear of Wolfchase, in my opinion. It used to be THE shopping area about 5-10 years ago, but is now over-run with chain stores, horrible traffic, and people. There's a lot there, but it's not worth the headache to me. Oak Court is a smaller mall in mid-east Memphis on Poplar, has some nicer stores. Usually pretty quiet and not crowded at all like Wolfchase.

I agree. I get the most accomplished at Carriage Crossing and Saddle Creek. I don't like Wolfchase either...but mall shopping doesn't appeal to me.
IMO...the grocery stores in Memphis could be better. I have to drive a long way to get to a decent grocery store and even then, I don't have one that has everything I want. If they have nice meat, the produce is lacking and vice versa.

My vote is for Carriage Crossing in Collierville; then Oak Court in Memphis.

I like to go to Laurelwood or Eastgate for a lot of things, especially if it means I can avoid a long drive out to Germantown.

Another vote for Carriage Crossing, and the shops at Saddle Creek. A lot of shopping "areas", here instead of malls. I agree about Wolfchase, unless you live nearby, there's not much but a bunch of chain stores and kiosks. The Macy's at Carriage is much better.
Sorry Memphis, but our grocery stores are SORELY lacking. We desperately need a Trader Joe's or Harris Teeter or Wegmans! Public Markets just opened this weekend, and I'm looking forward to trying them out. There is a Wild Oats which is great, it's downtown though.

Memphis shopping
For the most part, Memphis just has the same retailers, department stores and big box stores you can find anywhere else in the US. We simply have Dillards and Macys, but nothing really upscale along the lines of Saks, Neiman Marcus or Nordstrom. I read just recently that Nordstrom has announced that it will be opening its first store in Tennessee-- but of course, it will be in Nashville, not in Memphis.
Grocery stores here are also very run-of-the-mill. Schnucks, Kroger, and of course, Memphis is where Piggly Wiggly was started. There are two nice Fresh Market stores in East Memphis and Germantown. Unfortunately, we do not have Publix, which is perhaps the best regular grocery chain around. And we do not have a Whole Foods Market. The closest Publix and Whole Foods Market stores are in Nashville.

The Wild Oats at Poplar/Mendenhall seems to be a Wild Oats / Whole Foods mix, maybe Whole Foods is buying them? Anyway, they look like a typical Whole Foods, and they even carry the 365 store brand.
