I know an American living in Mexico who does banking there. Would they be able to open a joint bank account in both our names without my establishing residency etc. there?

thanks

Why have only a Mexican account? You can open an account with Banamex USA and one with Banamex Mexico that way you can transfer dollars to pesos online for free from Banamex USA to Banamex Mexico. Banamex is owned by Citibank. There is no charge at a Banamex MX ATM to use a Citibank card.

You can also open a Monex account. Deposit dollars in it and transfer to pesos for free to a Bancomer account.

As far as I know all you need is identification like your passport. People with visitor visas open accounts.

I think the OP was asking about whether he could be named as a co-owner or jointer on a Mexican bank account, without being physically present at the bank for the formality. Or establish one for himself without being present.

The answer is no - you must sign an account holder card in the bank in the presence of the account manager (with your legal signature).

I read that he asked if he could be on the account without establishing residency and yes he, can but of course he has to be physically present to sign the documents and present his identification.
