ok, so Nordic people in general... there are not many stereotypes, other than being tall, blonde and rich as I said before.

españoles = gallegos, gachupines -slur.
Eastern europeans = polacos
Americans, no matter their colour, gringos, also gabachos

In Chile, far away from the Mexican/USA Border, all foreigners are called/named GRINGOS, with the exception of Arabs, and no matter where they are from (Even Turks) all are TURCOS.

In The Mexican Bajio, where we go to spend time, we really have never come across European Tourists, Americans under the stones and everywhere else that u go, never europeans, young nor old.

Ummm....I do not mean disrespect...but are you sure about that?

It is usually the other way around. Mexicans call Lebanese and other Middle Easterners as "Arabicos" or "Turcos"....while chino is used to refer to East and Southeast Asians. Chino is also a Mexican slang word to refer to a curly hair person.
