Ill be going around the entire coastline of Florida and was wondering if there are any must see/do things in the Miami area that you would HIGHLY recommend ? Im into : Classic car shows, museums, beautiful scenery, photography, exploring, sightseeing, music , etc... The time of year I shall be in this area will be early Dec. 2009. Thanks much.

Early December is a nice time to visit Miami. Some sites to see:
Viscaya
Fairchild Tropical Gardens
Everglades National Park
Tobacco Road (I believe the oldest bar/restaurant in Miami)
South Beach
Coconut Grove
Bill Baggs State Park on Key Biscayne
Matheson Hammock
The Deering Estate
Knaus Berry Farm
The Fruit and Spice Park

In addition to that excellent list, make it a point to drive the entirety of Old Cutler Rd, and you probably will since many of those sights are along it.
