I would caution you, however, that there have been a few assaults on the bike trail in that area at night. If you intend to be on foot in that area, use the Metrodome LRT stop and walk the main streets.
The Metrodome LRT stop is pretty far to walk from the Holiday Inn Metrodome, and there really aren't any hotels close to the Metrodome stop. The area around the Cedar Riverside Station is fine for the most part most all times of day, during daytime/ early evening you have nothing to worry about, and just use common sense if using it later at night - I wouldn't recommend getting off at the station alone and really drunk after the bars close, but for the most part the blocks between there and the Holiday Inn metrodome are fairly well lit (with the exception of about half a block or so), and, once you get w/in a block of cedar after getting close to the corner of Mixed Blood Theatre, the area's pretty well-patronized by restaurant, bar, and theatre-goers.

Thanks for all the replies. A bunch of great info I will use for when we are in town.

We ended up reserving rooms here:

Best Western The Normandy Inn & City Place Suites, Minneapolis Minnesota

Which is located 405 S 8th Street.

The need to be near the light rail changed because we ended up renting a car. Originally we were going to do zipcar but renting turned out to be cheaper.

Again, thanks for all the great info. And if this is a terrible motel let me know.

I was actually going to recommend this hotel as a possibility but didn't as you had said that you weren't interested in downtown. The normandy is nice, and there is a light rail stop (government plaza station) about 3-4 blocks away from the front door, so you could go ahead and cancel the car rental if you wanted to .
