Are you looking to buy or rent? Either way, $2000 a month is a very decent budget in St. Paul.
There are a lot of lofts/condos in the downtown St. Paul area, look at the area surrounding Mears Park.... quite frankly, there is an overstock of lofts and condos dwtn St. Paul.
There was a recent thread regarding the condos at
St. Paul's Upper Landing Riverfront Development. These are located right on the river, almost across the river-front street [Sheppard Road] from the Science Museum, walking distance to Excel Energy Center [hockey, concerts, etc.] and along bike/walking paths up and down the river. Very cool! The complex includes a coffee shop and a 24-hour fitness facility.
Nice restaurants/bars are located at Irvine Park and around the corner of Kellogg Ave at W. 7th - along with a few antique shops and other such businesses.
Personally, I love the scenic drive along Sheppard Road, it's a great drive and provides great access in the city and as well as to freeways leading out of the city.

Another place to look is Grand Avenue in St. Paul... you can find a nice, older, historic apartment building in that area. Plenty to do along Grand Avenue. Anywhere from Grand/Dale to Grand/Snelling.
There are other areas of St. Paul as well, but those are what comes to mind when you say "single, active, mid-thirties" Personally, if I fit that description, I'd look closely at the Riverfront Landing Development, condos there start at 300k [approx. $1750/mo] - perhaps even less than that given the current economy.
