Thing to be aware of with Plymouth is that the school districts are split. Some is Wayzata, some is not. Plymouth is probably easier in terms of commute for most situations. EP is know for having great sports teams. Both would be good places to live if you prefer suburbs. Traffic out of Eden Prarie can be fubar, but they are doing some big projects that should help.
