How is this town doing economically? From street view it seems that there are still a lot of "Main Street" stores are open for business. What's the main industry, farming? Mining?

I think many people in Chatfield commute into Rochester for work. There is Mayo jitney service. The surrounding area still has tillable farmland. The farmers I've talked to have been changing from dairy to small beef operations, although corn and soybean are still grown. Chatfield's also a retail and professional community for surrounding small towns. Tourism also brings benefits to the area.

Chatfield seems really prosperous to me as I drive through. I've started using a professional there, and I've been pleased. Downtown is cute and usually busy. There is a unique music library in town. I've been watching meth crime in this area and it doesn't seem to be a major problem yet. Hwy 63 seems to be more of a drug crime corridor than hwy 52 (which goes through Chatfield.)

I like Chatfield, and think that if I worked in Rochester I'd choose Chatfield over any of the other surrounding small town options.

Chatfield is Anytown, USA complete with a community band performing Sousa in the park. I think a significant chunk of residents commute to Rochester for work. I think it also would have a decent base of agriculture, light manufacturing, tourism, and other retail/service business. It's definitely not just a bedroom community. The windy two-lane highway to Rochester insulates it enough that Chatfield retains its own identity.
