Default Looking for Cajun Ingredients

I got a Cajun Country Cookin' Cookbook and would like to make a few of the recipes. I'm having trouble finding some of the ingredients. I'm not really sure what I am looking for.

I'm trying to find

Chaurice, Andouille,Tasso and Cracklings.

I remember eating cracklings one time when I was a small child and I know they were not those puffed air things in a bag you buy at the store.

Andouille (pronounced like an-du-ee) is sausage. You should be able to find andouille sausage at the grocery store. Chaurice is also a kind of pork sausage. Here's a recipe for making it. Tasso is a kind of ham.

Cracklings are pork rinds.

Mmmm, looks good! Always looking for cajun recipes. But can the OP get andouille in Illinois? Hard enough as it is to get the bona fide stuff in Texas. Best I ever found was at Heberts in Lafayette, LA. Thanks!

Sure! Jusk ask your grocer to get it for you! I have no problem buying it here in New Jersey. Goes well with my Red beans & Rice! Laisse bon temps roulet[sic] or something like dat!

You should be able to get things shipped to any where. My nephew orders it and lives in Conn.There are tons of mixed spices but I suggest that you mix your own out of your favorite cajun cookbook.Do a google search on cajun cooking ingredients.
