I've been to all of them, but I was only in Tallahassee for a few hours.

Columbia is pretty similar to Jackson. Relatively small Southern capitol. A bit cooler in summer and warmer in winter.
Tallahassee is same as above.
Orlando is very different from Jackson. It's a booming tourist mecca. And mild/warm year round.
Mobile is a bit bigger than Jackson, but also fairly similar.
Baton Rouge is quite a bit larger than Jackson. It's also a bit more of a "party" town to me. Also LSU is there.

Culturally they are all very similar, except for Orlando.

Good answers.
The only thing I can add is that Orlando area is more pricey. Baton Rouge has a French history as the others all have English history. Baton Rouge also has more fantastic restaurants with it's heritage. The culture is more inclusive of all age groups, and a bit more prosperous than Jackson, overall. Big on historical events and places. The Napoleonic Code is the law of Louisiana and the counties are called parishes. Just thinking about it makes me hungry!

It would be hard to choose from these choices.
