I hope you come to MC! I'm from CO too (used to live in Vail!) and am going there for law school in the fall.
I attended the undergrad for 2 years (transf. from CU) and it is definitely different from city and mountain living. I would definitely not describe it as bike friendly, I mean you'll have to drive to any trails you want to ride. People don't respond nicely when you're a biker on the road, either.
Like other people have said, Fondren and Belhaven are pretty cool areas with rent that won't be too expensive. Just be careful about the area you choose to live in--you can kinda tell what parts are rough. Most people are nice though, so it shouldn't be a problem. If you need help, go to Nejam Properties in Belhaven.
There's a lot of cool stuff to do in Jackson, lots of neat local spots. It's also nice that big cities are all 3 hours away, which is good for weekend getaways.
Also...it's not religious at all, but the undergrad was crazy religious..

Haha, sounds like you got a taste of the "tribes" at MC

I'm glad to know you have made your niche here in Jackson.

The closest you can get to Madison is Ridgeland if you are looking to rent.
