Been there, got the T-shirt...LOL. When I was growing up ,we always took the new boy scouts on a hunt, as a "welcome".

I think the season in Mississippi for snipe is about the middle of November to the end of February and I think the bag limit is 8 birds. In my state the bag limit is the same but our season is September 1 to December 16 for Common Snipe (Wilson's Snipe).

The beauty of the prank is that many people are not aware there is an actual bird called the Snipe, so they have no expectations as to what it looks like or how to bag them, so you can tell them anything. Snipe hunting usually only works on young people who lack knowledge of the outdoors and/or hunting.
Why didn't they come up with a unique name for this creature? Who knows, but maybe it was because Skittiwampus hunting doesn't have the same ring to it, or maybe the person who started this practice of leading kids into the woods on a wild goose chase had no idea there was an actual bird called the Snipe.
Just go with it.

You must try Dinosaur Valley State Park in Glen Rose, Texas. The snipes there are plentiful and tender.

We pulled this on a guy at work once. It all started as an innocent camping trip but when Snipe hunting was mentioned, he didn't know a thing about it. He was skeptical on the capture method but the entire department (a bunch of computer programmers) and support staff went along with everything we told him. Thank goodness it was a few years before the internet became popular because we described the bird as a cartoon character. We just changed the height to be 8 inches tall. Otherwise he looked just like the picture below.
