Coon is pretty good, although it seemed greasy to me.
BBQ pork steak, fried potatoes and wilted lettuce are some of our family favorites.

Never cared for Carp either. Now catfish is another story. Love it. And trout. Used to go trout fishing on the opening day. What a riot. Most of the people standing shoulder to shoulder, getting their lines tangled and almost falling in if they were on the bank. Fun times!

I just reread the whole list and about the only things I see missing from my Missouri youth are scrapple and head cheese.

I'm surprised that I never ate scrapple since my Paternal grandmother was part PA Dutch and that is one of the states in the east that this dish is associated with. Not fond of head cheese either.  I tried it once when I was a teen.

No opening day for me here.Open year round hardly ever see anyone and catch Trout year round.
I know not Trout but caught a mess of Rehorse Suckers today and found a mess of Morels.
