I wondered if they were up yet...its getting harder and harder to find places that aren't overrun with other mushroom-pickers. I LOVE morels sautee'd in butter. Hate cleaning out the sand, though. I cut into a slug once that was hiding up inside....EWWW!

I am NOT a fan of scrapple, at least not the way my folks made it. They shared a hog with a friend and did the butchering themselves. Then they made a big fire, hung a huge caldron over it and added lard, leftover meat and cornmeal I think, as well as seasonings and cooked it down. When the meat cooled they packed and froze it. Mom would cook it patty-sausage style and serve it with maple syrup. I don't know if it was the cornmeal texture, the seasoning mix, the grease or the syrup, but I just couldn't eat it.
I would like to try head cheese, just never had the opportunity.

Never tried it with maple syrup but the rest of it is right on the nose. Fond memories, makes me want to run out and buy my own cauldron.

How do Missouri folks feel about saltwater clams ?
My Dad just loaded up a carload of
Jersey saltwater clams for an emergency mission to Missouri .
My friends say that all they can find out there are yucky freshwater clams - LOL
