To date I've only seen one movie from each:

Rousey in Expendables 3 and Carano in Fast & Furious 6.

Obviously Carano has more experience, but from what I've seen Rousey will never hold a candle to Carano in acting. Rousey has a long way to go with experience, but Carano is smooth IMO.

Until either gets a role with less than two fight scenes they are both essentially celebrity stunt players. And due to her longer time as a champ Rousey with an increased cross cultural acceptance of woman fighters, in the couple of years after Carano has the higher profile and the potential to take roles Carano got when she retired from fighting if she goes that route. Time will tell if either can become a Chuck Norris or Steven Seagal or even get minor non fighting roles with age like a Jeff Speakman.

Not that she does much acting in it, but Carano is in Deadpool. OP hasn't seen Deadpool?

Also, what Taiko said. It is EXTREMELY uncommon for someone to be so universally talented as to succeed in multiple fields (such as fighting and/or acting) on their own merit, and not simply because of popularity in one. Not impossible, but certainly the exception and not the rule.

She was the star of Haywire with an emerging Channing Tatum and Michael Fassbender in 2011 but now Rousey has more cultural pull and casting upside if she doesn't return to fighting and goes into acting full time.

Honestly just putting this up here because I love this movies on so many levels.

And I agree there are not many Arnold Schwarzeneggers out there. From mr universe, to Hollywood icon, to governor of California. Granted as governor not sure how successfully that went.

Gina Carano is better all around. In the Blood was great and a good example of her ability to star in a film of her own.

Gina is the prettier one. Ronda is pretty but she has a very hard face.

Also, they both became movie stars due to their high profile MMA careers. IMO, Ronda has to win in order for her movie career to continue. If she loses and quits MMA, i don't believe she will have the Hollywood pull she did. Ronda had a lot of hype in her MMA career. (the baddest chick on the planet, she can beat mayweather in a boxing match (LOL), she might be able to beat MMA dudes, etc.) Gina somewhat left before her hype reached its apex.

Also, Gina is a B to C movie actresses. In Deadpool, she didn't really have a lot of lines or movie time. I don't see Ronda getting A movie roles a lot. She always plays the hard tough chick. (expendables, F&F 7, etc)

As beautiful as Gina is...it was hard to watch her in movies. Acting is not in her skill set.
Ronda is easier to watch, but of course not as beautiful.

Carano basically started her acting career after losing her prime time TV coming out match but so far does not seem to being doing the broad base of roles, starring in her thing and playing smaller parts in others movies like Dwayne Johnson or Jason Statham did as they moved from sports and WWE and reached movie star status.

It seemed just about as soon as that loss happened we had Rousey emerge with the sports and general news media calling her the baddest woman on the planet and it seems as if she has all but pulled an Ali and proclaimed herself as the greatest. But then on movie and TV and real fighting skills don't count. Even if a Ming Na Wen of Agents of SHIELD, or a Michelle Yeoh do their own "dance" steps when you have a Zoe Saldana or Grace Park of Hawaii 5-0 swing a skinny leg in your direction and a 300 lb man goes flying you don't need an actual fighter to play a part. And once the media stops covering their sporting accomplishments there really isn't much that either Carano or Rousey has to offer that trained actresses can't do better.
