My daughter says I also should buy an "Eye-of-The Round Roast" (about 4 pounds or so). It should be about 3 to 4 inches in dia and approx 8 inches long I guess. She says cooked to about 140 degrees, it then is excellent for "Au Jus" sandwiches when sliced very, very thin. Rubbed with a little Bacon Grease(to get the seasonings to stick) all over and then Seasoned heavily with Garlic-Pepper, Seasoned Salt and Steak Seasoning, it should be pretty tasty.

The other thing I want to try is about (6) of those Giant (wild) Prawns (just saw some a few days ago at the Super One Grocery store). Soak those babies in a Zip Lock Bag overnight (in the Frig) in a Marinade of Lemon Juice, two Tablespoons of mashed up Garlic & some white wine.......then baste them with melted butter and Sprinkled with Papricka(sp?) just after tying them on that "spit".

Wha da ya think?
All of that sounds great. One suggestion is to head over to the nearest place that sells bar-b-q's. They sell all kinds of attachments for rotisseries, like 4 inch wide, 2 inch thick, 10 inch long baskets that slip onto your rotisserie bar, and also these skewer pins that are. about 10 inches long (3 skewers). Think filling the basket with wings, or making shishkabobs, or fill the basket or skewers with shrimp, etc.

By the way, one year I found Italian Dressing with no seeds. For grins, I injected a turkey with it and then deep fried it. To date, it was the best turkey I've had with a store bought sauce to inject. Ive had good luck with home made injections.

That will work also. Don't forget it catches your au jus. Don't know if you noticed but the crumb catcher is the floor of the oven.

One thing no matter which way you do it and this is a critical safety thing. IT MUST BE THAWED AND DRY or you risk an oil explosion.

If you're using the gas burner method and you want to be as safe as possible shut off the flame when putting in and taking out the bird, that's how a lot of oil fires are started and houses/garages are burned to the ground.
Look up Alton Brown's (Food Network) episode on turkey frying, he's got some decent ideas.
Thanks Jim, I think I can get by. I've been deep frying turkeys, geese, ducks, chickens, 15 pound roasts, for over 40 years. I have 3, gas fryers. 24 quart, 36 quart, and a 72 quart.

Another 'critical' safety factor that causes most fires is too much oil and the speed you lower the bird. Take your time and you don't have to shut it off. People buy smaller fryers because they don't want a big one, and then in order to submerge the bird, they have to fill it too full. The pot an have a mark (do not fill above this line) for a reason. Also, use only Peanut Oil, less flare up and less bubbles, and less spatters.

My thoughts ...
Overnight? In citrus? Wow, that's a loooong time. Or do you add oil to the marinade?
Make sure you have plenty of oil to keep the citrus from cooking your shrimp. I never let fish sit in citrus juice unless I want to eat it "raw" (cerviche), and then only about 20-30 minutes. Maybe use zest only in marinade?

Thanks for bringing that to my attention..............I hadn't thought about the "cookin' " effect on something as delicate as shrimp.

And you're correct, I found a receipe on a piece of paper in one of my late wife's cook books that does have some "grape-seed oil" added to the marinade mixture.

Thanks again.....................

It seems that Montana-ner's (haha, made up a new word) enjoy a good time, & eatin' & partyin'. So, I think being in cold winters allow for more innovative ways to eat, drink & be merry. I am in AZ now but someday need to get up to the Grizzly State's turf to see the Rockies -- other than trips I've taken to Colorado which didn't impress -- as Colorado doesn't seem anything like Idaho or Mont.

Ok, I'm probably way off line here but had to add to this thread, my 2 cents, even if in a random manner. I think being close to Canadian border would be neat, as hockey is my 1st love & snow, my 2nd, til I have drive in it again, haha.

Thanks for letting me join in this convo, haha, though everyone will think I'm nuts.

Went to Glasgow this weekend and hunted geese with some friends. Saturday was a bluebird day- too nice for birds to fly to decoys. Yesterday was much better. 6 of us and we took 23-24 geese! Man that place is for the birds, lol..

Problem was, we were living on base and didn't have a kitchen or anything to cook them with, so we went over to the enhancement supply that would check out camping equipment etc. to the sailors for recreation.

They had a big propane cook bottom from a turkey fryer, but no pot. They did however have a huge coffeepot, so we took those and dumped in a bunch of beer in the coffeepot with the clams to cook.

Since we didn't have plates or utensiles, we bough a big chunk of butter at the BX, and cooked our clams, grabbed them out of the pot, and ran the shell along the butter to scoop it into the meat.

Yes, a lot of beer was consumed during the project, both in the pots and in the cooks, but sitting on the beach at Peugot Sound in the evening, drinking beer, burning our fingers on those delicious clams while BSing with my shipmates...

Now that is a good memory
I wonder what the outcome would've been had y'all tossed some pasta in the clam/beer water?

I found out from this weeks doctors appointment, that your numbers can be entirely too low. Cholesterol, LDL (bad cholesterol) is 12.
Total cholesterol is 68.

These numbers are extremely low and my Dr at the Sheridan VA is setting me up with a specialist in Denver. I am seriously malneutritioned and I am slowly starving to death. He is worried, so am I. The problem is, I am eating 6-7 meals a day, but I am absorbing, nothing. I've lost all of my strength, to the point that it is extremely difficult to get up from my Lazy Boy. Its not even one of those overstuffed ones but rather a really nice firm one. I have 4 steps to come up on my porch. Today, when I got home from the VA, I went up 2 steps and had to rest for a minute before going up the other 2. I can't drive, I had the VA send a van out. I can't get into my pickup. The VA has two vans, a mini van, and a full sized one. I can get in the mini van, but have to have help getting in the full sized van. As a result, they make sure they send out the mini van. The VA has me coming in, twice a week. Not sure how much longer I can keep enough strength. Oh, ad they took me off of the Hydrocodone. Instead, they put me on 2 different Morphines. 30 mg sustained, and 15 mg fast acting. One of each, every 12 hours. At least I finally got some pain relief, but they don't make me sleepy, nor do they effect me other than bringing pain levels down to a level of 4. For several months now, the hydrocodone could only get me to a level 6.

............Well Elk, I'm so sorry that "your road to recovery" from that major surgery you had this past summer has been "a very rough road" .
I certainly hope the specialist in Denver can find answer(s) to your situation and get you back on the Good Road!
I'll be thinking of you and praying that the Good Lord restores your health ..................................Griz

Thanks Griz. You know, its tough to comprehend that I am not hungry, but hungry or not, I'm eating several good meals a day. Red meat, fish, Normandy Blend veggies, potatoes, soup, white gravy, etc... and then I'm told that I am malnutritioned and am starving to death. What the hell? Hopefully they can come up with something like Pancreas Enzymes, or something of that sort that breaks down food to be obsorbed easier. I was told I was going to have a tough row to how, but nobody thought this was ahead of me.
