We love mashed potato pancakes- just form mashed potatoes into a patty & fry crisp.

We also are getting hooked on costco's instant hashbrown potatoes. And Happiness you will be Happy to hear I fry up a ton of spinach in the olive oil before I add the potatoes! We had them yesterday with an egg on top & salsa. Yum!

Everybody keeps mentioning hashbrowns. I want to mention something I started doing. I love meatloaf. I buy hashbrowns in 3 lb bags and where I order them from, the smallest package I can buy is 18 lbs. six, 3lb bags. So I use a lot of hashbrowns (They are made with real potatos).

A while back I went to make meatloaf and realized I was short on bread. So instead of using bread, I put in 3 cups of hashbrowns. It was outstanding! Ground Chuck, an egg, sage and other spices, a little milk, hashbrowns, jalapena's, bake it for an hour and 30 at 375 and it comes out mighty tasty.

That sounds yummy...something else to try. :O)

Ok, grease a muffin pan well. Take rashers of bacon, form in a circle and line the insides of each muffin tin. Add a pinch of your favorite hashbrowns on the bottom (I like southwestern style), then a pinch of your favorite shredded cheese, then crack an egg in each of them. Bake at 425 for 22-25 minutes or so. Proceed to Noms. If you like your bacon crispier, fry in a pan before lining the muffin tin. If your hasbrowns stick to the bottom, you didn't grease the tins well enough, but putting a wonton wrapper in the bottom helps, too.

How loose is the egg? My husband will have on his tombstone...I hate runny eggs!

I'm not sure if that was to me, but if it was, the eggs are fully cooked. My hubs is the same way. No liquid chickens.

I form leftover (refrigerated) mashed potatoes into a patty, coat lightly with flour and fry in bacon grease. Be sure to sprinkle lots of pepper and salt on the patty!
