If you are doing a marketing analysis, you might also add financial feasibility. My wife loves sushi/sashimi and when she picks up it up to go, it usually runs $60 to $70 for two, without sake or Sapporo. If a special niche Japanese restaurant is going to survive in Billings, the average Montanan is going to have to be willing to pay big bucks consistently for what some posters have already described as "bait".
The same point applies to a Japanese steakhouse, even without having to convince Montanans that steak is good. Typical salaries don't support the price of real Kobe beef.
My comments are not intended to discourage you, but to emphasize the necessity of thorough strategic planning. Most people welcome an expanded choice of good places to eat. However, no one wants to see another failed small business.

The ability to pay in Montana is NOT a factor when a diner is after an exquisite cuisine and pleasant atmosphere. Missoula, for instance, has a handful of excellent, pricey resturants that are full most of the time. Even us native Montanans like something other than deer jerky and hamburgers once in a while. Sushi Hana in Missoula has two locations but I've never been there.
