What you're describing is sometimes called "family style" -- where a group will order a platter of this and a plate of that, and everyone at the table serves themselves whatever they want. There was a good Chinese restaurant in Helena that did this, and the few times I was there, they were absolutely packed. I like this style because of how you can try different stuff without having to commit to a whole serving. It's like a buffet that way, except that you don't have to run around collecting the food yourself, so dinner conversations can continue smoothly, kids stay under control, etc.

I think it is especially suited for unfamiliar foods, since as I mentioned it lets people taste-test the various dishes without being stuck with nothing else to eat, if something proves not to their taste.

I expect the restaurant owners figure out in a hurry what people like, too, because those will be the platters that are empty, while the stuff that wasn't so well received will still have leftovers. Instant valuable feedback on both your cooking and on your customers' tastes.

A restaraunt like that with perhaps a couple rooms for family parties or gatherings of multiple people where they could celebrate together and other patrons wouldn't either intrude or be bothered by large parties, in a family style service, sounds like a great place!!!!

There is a new chinese place in Big Timber that has the option of ordering a dinner for however many people that has soup, entrees, side dishes etc. all for one price and you order for the number of people you have. I like the style.

The food sounds fabulous too. I haven't had a good authentic Gulas (goulash), since I left Bosnia. You probably use a different style as what they had used lamb and sour cream in the same dish.

I know kosher stuff is supposed to be of really good quality, never really had anything to do with it, but always willing to try something new.

A thought just occured to me - a thing you must do before you come to Amreica. Go to the US Embassy in Tel Aviv or Consulate in Jerusalem. You must apply for the type of Visa that allows you to work in the United States. You cannot work here on a Tourist Visa. Perhaps you have already done this but I just wanted to be sure that you knew.

Another thought. I believe you will have a difficult time trying to keep a kosher kitchen in Montana and earning a living. As I mentioned, since the dietary laws of both Jews and Muslims are somewhat similar, perhaps you could expand your cuisine to include both. As a result you'll have more customers who like Arab and Mediterranian food and who may sample your Israeli-style dishes as well.

I know that Arabs and Jews "fight" over who invented hummas and pita bread as well as everything else!! I remember those arguements from 36 years ago.

I vaguely remember from back in my childhood Sunday school days a passage that said something about not ever eating meat cooked with the animals "mothers milk". (Is a cheeseburger really a sin?)

This was not long before I was taught that "a man who looks at a woman lustfully has already committed adultery with her in his heart", and that is a sin... When that one came out I knew that I was screwed!

ElkHunter, I think all the pickles sold at Wally World are certified kosher (they have the u inside a circle, the hecksher, or brand, of the Orthodox Union, the professional organization of Orthodox rabbis, printed on their labels).

The "kosher" dill pickles have garlic while the plain dill pickles, that are also certified kosher (they have the u inside the circle on their label), do not have garlic.

Rather than calling the dills with garlic "kosher dills", they should be called "Jewish dills".

By the way, most American Cheese, as well as many other hard cheeses, are not kosher to begin with: American Cheese is made with rennet, harvested from either a calf's stomach or a pig's intestine and used as a hardening agent in cheese production.

Kosher cheeses, which are becoming more available, are made from a non-livestock rennet.

By the way, whether you go to Wally World, Smiths, Albertson, IGA or any other supermarket in Montana, you might be surprised to find that, excluding the meat counter, about 90% of all the products sold are certified kosher, and have one of these symbols



printed somewhere on their label.


The major kosher certifying agencies in the U.S., with their certifying marks, in order of prominence:

Circle-U (U inside a circle): OUkosher.org
Star K (K inside a 5-pointed outline of a star): Star-K Kosher Certification
Circle K (K inside a circle): OK Kosher
Kof K (K inside the Hebrew letter kof): Kof K
cRc (Small capital C on either side of a Capital R): Chicago Rabbinical Council

Note: Texas-K (K inside of an outline map of Texas) is now a subsidiary of cRc

Very interesting, thanks Walter...

I worked for 3 years in Chicago in the mid '90's on a telecom project and miss the Kosher deli's. I used to go to one for lunch and they made this sausage sandwich for us that was to die for! Thinking about it now there was no cheese on the sandwiches.. Never thought about it until this thread!

Milk is usually with breakfast for me.. or dinner. I honestly don't remember asking for milk from the deli.. Never really paid attention or thought of it, just a sandwich and fries.. Every once in a while they would make Croquettes.. (might have spelled that wrong..) Now I'm getting hungry!
