Tough question to answer as there are thousands of restaurants to choose from.
but if its 3 you want then
Schwartz 's as its got the best smoked meat sandwich in town.
Kam Fung in China town has best Dim Sum, the locations in the suburbs arent as good.
Best steak and roast beef is a toss up between
Magnans Tavern or Le Bifteque.

Also honorable mention goes to chef Martin Picards "Cabane a Sucre Au Pied de Cochon" restaurant for a truly Quebecois experience.

Moishe's for steak.
Mythos on Park for Greek. Ouzeri on St-Denis a close 2nd.
Mikados on St-Denis and Kaizen Treehouse for sushi.
Lasalle Drive-In for the Pete Special (hot sub made of pizza ingredients, even the dough)
Palais Montcalm on Ontario for pizza
Village Grec on Jean-Talon for souvlaki and gyros
Le Roi du Smoked Meat on St-Hubert

Le Queue de Cheval - Excellent steaks and service.
Bonaparte - Classic French dining in Old Montreal.
Ruby Rouge - Great dim sum in the heart of Chinatown.

Le Comptoir charcuteries et vins: Best Charcuterie I've had in Montreal, which is saying alot considering every restaurant seems to have a great Charcuterie plate.

Schwartz's: Favorite smoked meat anywhere. Much better than Main across the street IMO.

Au Pied Du Cochon: A great display of Quebecois cooking. Its loud, edgy, great ingredients and wonderful cooking. A must, but very difficult to get reservations these days.

Les Trois Petits Bouchons: Great French Bistro. Its a menu that reads like the place would be pretentious but its the complete opposite. We eat here every time in Montreal and the owner remembered us by name even though it had been over 9 months since our last visit. The people there are genuine and the food is downright delicious. Only locally sourced ingredients, great small but carefully selected wine list and a menu that changes daily so your meal would never be redundant. I can go on and on about this place, but its hands down our favorite place to eat in the city.

Brasserie T: Went there for the first time last week and had the best Steak Frites we've had anywhere. Including Paris. Great service as well.

I know that is 5, but in a city with a restaurant scene as good actually great as Montreal its hard to narrow it down any further. I would also recommend a visit to the Jean-Talon Market as well. Walking around and picking up Cheese, Fruits, Breads, charcuterie and pastry is a real treat. Very affordable as well, plus Parc Jarry is right down the road to have a picnic if you choose as well.

Restaurant "Nouveau Verdun" on 5e and Verdun. They serve home-style comfort food with a diverse menu, and it is very fresh to order. I used to love going there.
