There were many actors who were or would go on to become screen icons and legends who acted as extras and bit parts in Ben Hur:

Paper Moon ~ Dejah Moore in the $20 bill scene / Only a few people might know her name. This is the first of only two movie roles for a lady who could have been a great character actress.
Jaws ~ Susan Blacklinie, who creates the most convincing death-by-shark-bite EVER!!!!! People know this scene but rarely know the actress' name.
The Two Mrs. Carrolls ~ Barbara Stanwyck and Humphrey Bogart (especially him!)
Undercurrent ~ Katharine Hepburn, Robert Taylor, Robert Mitchum
Monster! ~ M. Emmet Walsh in his only almost-starring role
Roadgames ~ Stacy Keach and Jamie Lee Curtis
Knightiders ~ Ed Harris and Tom Savini
Lured ~ Lucille Ball and Boris Karloff
Lost in Yonkers ~ Mercedes Ruehl

Just about everyone in Newman's supporting cast in "Nobody's Fool". Bruce Willis, Melanie Griffith, Jessica Tandy, Pruitt Taylor Vince, Phillip Seymour Hoffman...

Peter Falk in "Wings of Desire".

Gene Hackman as the blind man in "Young Frankenstein".

Charlie Sheen at the end of "Being John Malkovich" (and I can't help but think that somehow that inspired the Les Grossman character in "Tropic Thunder", which might be Tom Cruise's best role in the past decade).

Abe Vigoda in "Joe Vs. the Volcano". Would've stolen the movie if not for Barry McGovern's three minutes as the luggage salesman.

Stephen Wright as the pilot in "So I Married an Axe Murderer".
