One of the few movies I ever watched about Cajun's was "Southern Comfort" It was about a Natonal Guard Unit on their annual weekend training gig who accidently shot a cajun and then had to fight for their lives to escape. Only problem was they only had a couple live rounds of ammo and the rest blanks. Powers Booth was excellent in the lead role.
And I would watch a mini series about what you decribed, too.
