I'd vote for Goodfellas but I have never seen Carlito's Way even though I have intended too for a long time. I guess I need to set that up to record or probably should watch it on video so it isnt edited.
Godfather I & II are the standards by which all others are judged and found wanting. If only we could forever wipe III from our memories.
Goodfellas, The Untouchables, and Casino are all excellent.
Donnie Brasco is good, though it's not one of those movies I can watch again and again.
I thought both Carlito's Way and Scarface were EXCEEDINGLY over rated films. CW is just kinda boring, and Scarface is downright bad for long stretches.

You can't go wrong with any of the films above. Casino goes on to long and drags with the whole Sharon Stone acting crazy scenes towards the end--but the opening scenes showing how the mob controlled Vegas and the ending where everything falls apart are Scorcese at his best. Great use of music just like in Goodfellas.
Untouchables is basically a good action film with a cool setting though it's completely unrealistic, Donnie Brasco's an enjoyable genre film, and A Bronx Tale is decent, but it seemed way better when I was a kid.
King of New York and Scarface are great in their own way, but they're just completely over the top films, that really stand out because of the performances of Walken and Pacino.
Once Upon A Time In America has an awesome first half--though towards the end it starts to lag and I've never been satisfied with the conclusion.
Scorcese's first film Mean Streets is sort of uneven--and it's not totally a mob film though the plot focues on guys on the edge of the Mafia, but it's one of the best films showing what Little Italy/Lower Manhattan was like early in the 1970s.
Godfather III is sort of a what-if scenario...because if Scorcese could've got the actors he wanted--Duvall was going to return as Tom Hagen and Winona Ryder, not Sofia Coppola was supposed to play the daughter--and would've focused more on what he wanted to show as the downfall of Michael Corleone, maybe it would've been a better film. Tom Hagen was originally still supposed to be a major character going into conflict with Michael. They had to rewrite the whole movie after Duvall wanted more money, so as it stands it's a few good scenes like some of the Sicily stuff and Eli Wallach's old Don along with the assasination of Joey Zaza in Little Italy--but the rest of the film is pretty boring.
