I read somewhere that Rogue One takes place just before A New Hope. It's dealing with the first death star and not the second. It seems that must not be correct, because Solo, Leia and Luke are all middle aged in Rogue One and Vader is supposed to be dead when those 3 were in their prime years. Solo and Leia's kid who turns to the dark side was an admirer of his grandfather who was Vader.. so how is Vader alive in Rogue One?

You're confusing "Rogue One" with "The Force Awakens."

I think you need to watch it again, at least the last minute or 2. Also keep in mind that Carrie Fisher was 19 when she first played Leia. That's not middle age.
