What do you think is the appeal of spy movies? Is it the action? The danger? The suspense? Or could it be the appeal to the human mind of spying on someone without them really knowing it.
Also, I googled the words Spy Movies, and quite a few spy movies have been made:

I haven't seen a lot of those. Not sure I'd consider MUNICH a spy movie though. It's about assassination, not spying. Great movie though. ARGO is another great one, though again, I'm not sure it's really a spy movie. I have never seen the appeal of any of the BOURNE or MISSION IMPOSSIBLE movies. I just don't find the action all that memorable when I don't care about the characters. It's like watching your kids play a video game after a while.

Not to disagree with you... but from what I've seen, they're almost the same difference.
Like I know that you were an "Alias" fan, and Sydney's mom was an assassin. But she was also a Russian spy too.

I think that I liked one or two of the Bourne movies. Also, I didn't like the Mission Impossible movies(and I was kind of offended that they made long-time hero, Jim Phelps, into a villain) until the 4th one, Mission: Impossible – Ghost Protocol. And I don't know if you saw that one, but I thought that it was sensational.

Yes, Get Smart was a decent TV show adaptation movie. Especially, compared to most other TV show adaptation movies which usually turn out to be horrible.

I enjoy the older James Bond movies. I like the action, the mystery...cool gadgets.
I think that it was the older James Bond movies that started the appeal of spy movies in me. And which was that: I always liked that the secret spy organizations had the backing and the resources of the government, and that they were up against some sort of enemy or organization which also seemed to have unlimited resources. Therefore, the stories would involve bigger-than-life type end-of-the-world situations.
Also, because both sides had unlimited resources, you would see the the biggest criminal lairs, the biggest boats and ships and weapons. Along with the best cars and gadgets and devices, etc, that all had the latest technology.

When I think of a "spy movie," then the plot ought to involve some sort of espionage or subterfuge. That wasn't what MUNICH was about. It was about a team of assassins killing people. But I don't really want to quibble. MUNICH is a great movie, no matter what genre handle you put on it.

Yup. And what's so good about it is that it works as both a spy movie and a comedy. Succeeding at two genres simultaneously is impressive.
