I'd say both of those. I'd add:
Willie Nelson in Wag The Dog.
Sting in Brimstone & Treacle.

I thought Coppola's Dracula was terrible, but Tom Waits was great as Renfield.

Although critics didn't like it, I liked Neil Diamond in The Jazz Singer in 1980. The music really contributed to the movie.

Sorry, Will Smith is a famous actor....if he'd kept with rap he'd be long gone by now.
My suggestions....
Aretha Franklin - Blues Brothers
Cher was good in a couple movies
Bette Midler - tons of movies
Alanis Morissette - Dogma....just for a short bit but made the movie.
