I'm a big Butch Cassidy and the Sun Dance Kid fan. I also like the Fugitive and the first Terminator movie.

Besides the ones already mentioned:

The Counterfeit Traitor
Not Without My Daughter
The Killing Fields
Victory
The Road Warrior
Jurassic Park
Sleeping With The Enemy
Dante's Peak
Shining Through

I saw one within the last year or so with that rough looking guy from the Transporter movies and Ian McShane. Can't think of the name of it so it isn't great but it is an escape movie.

Jurassic Park trilogy ~ I love all three because I've been crazy about dinosaurs since my parents taught me to read, at 4 years old, using "Then and Now", a Little Golden Book about dinosaurs and reptiles.
Butch Cassidy and the Sundance Kid ~ which deserves another mention
Eddie Macon's Run (1983) - IMDb
Mean Dog Blues (1978) - IMDb
The Defiant Ones (1958) - IMDb
Fortress (1992) - IMDb
Fortress 2 (2000) - IMDb
Escape from L.A. (1996) - IMDb
Escape from New York (1981) - IMDb
Outlaw Blues (1977) - IMDb ~ sort of an on-the-run film

There's also the Cube movies:
Cube (1997) - IMDb
Cube²: Hypercube (2002) - IMDb
Cube Zero (Video 2004

Spy Game with Brad Pitt and Robert Redford, a terrific duo
Sugarland Express with Goldie Hawn; one of Spielberg's earliest.

Oh! I was going to list "The Sugarland Express", but I got caught up watching something on TV and forgot to add that one. It's a shame that the film doesn't get aired much. It's one time when William Atherton plays a likable person since he often is cast as bureaucrats~the huffy, self-righteous, by-the-books type.

I don't recall if "Duel" (1971) has been mentioned. While it's a pursuit/chase film, its focus is on a regular guy trying to escape the relentless semi-truck set on destroying him. Hey! That's early Spielberg, too!
