I agree with these:

The Godfather I & II
Goodfellas
Casino
Road to Perdition

I'd also add Donnie Brasco, A Bronx Tale and The Departed - and although not really a "mob movie", I really enjoy City Hall with Al Pacino, Danny Aiello, Tony Franciosa, John Cusack, Martin Landau and Brigette Fonda.

All of the movies that you have mentioned are great! But I definitely agree that Godfather 1/2 are #1!!!!

I've seen all mentioned except Last Man Standing, and agree that they were all great movies, but I'll give you a slightly obscure one, "Gotti", starring Armand Assante. It was an HBO movie, but it's very authentic and Assante nails the flamboyant, volatile Don. But truthfully, as far as mob portrayals, and I know many won't agree, but for my escarole, The Sopranos was the most honest, textured mob dramatization ever.

I like a lot of everyone's choices, especially The Untouchables, Godfather 1 and 2, Goodfellas, Donnie Brasco, and Road To Perdition.
Quiet Walker, Miller's Crossing is one of my favorite movies ever.
And Gangs of New York got mixed reviews, but I enjoyed its operatic tone.
There's also A Bronx Tale.
Oops, I didn't see that Charley already mentioned A Bronx Tale.
I guess I have nothing new to add except "me too."
